  • 1 kggreen beans, diagonally cut into 4 cm pieces
  • 2 tbspvegetable oil, plus more for frying
  • 400 gpotatoes, cut into French fries
  • 400 gbeef tenderloin, cut into 1 x 4 cm strips
  • 1 piecered onion, sliced into rings
  • 2 piecesyellow chili peppers, seeded, membranes removed, sliced into rings
  • 2 piecesgarlic cloves, finely chopped
  • 4 piecestomatoes, peeled, seeded and cut into wedges
  • 1 tbspchopped parsley
  • 400 gPeruvian-style white rice, to serve
  • to tastesalt
  • to tastepepper

Préparation

  1. Cook the green beans for 1 minute in boiling salted water, refresh them in ice water, then drain.
  2. Heat an oil bath to 180 °C and fry the potatoes until they are golden and crispy.
  3. In a very hot wok, stir-fry the beef for about 2 minutes in the two tablespoons of oil.
  4. Add the onion, chilies, beans, and garlic, then stir-fry for 2 minutes. Add the tomatoes and parsley, remove from the heat, and season.
  5. Serve with the fries and rice.

The suggested quantities are a starting point: adjust the seasoning and cooking time according to the products used.
