  • 500 gpuff pastry
  • 500 mlwhole milk
  • 250 mlheavy cream
  • 250 gsugar
  • 120 mlwater
  • 8 piecesegg yolks
  • 40 gflour
  • 1 piecelemon
  • 1 piececinnamon stick
  • 1 podvanilla
  • 1 pinchsalt

Préparation

  1. Roll the puff pastry into a log, cut it into 12 pieces, then press them into the molds using slightly damp fingers.
  2. Bring the milk, cream, lemon zest, cinnamon, and vanilla to a simmer.
  3. Whisk the flour into a little cold liquid, then add it to the hot mixture and cook until slightly thickened.
  4. Boil the water and sugar into a syrup for 3 minutes, pour it into the cream, then stir in the egg yolks once the mixture has cooled to lukewarm.
  5. Fill the pastry shells three-quarters full and bake for 12 to 15 minutes in a very hot oven at 250°C (480°F) until browned in spots.
