- Heat the oil in a large skillet. Add the chicken pieces and brown them over medium heat on all sides.
- Remove the excess fat from the pan, making sure to keep the pan juices.
- Pour in the white wine and cook until it has almost completely evaporated.
- Add the whole garlic cloves, rosemary, sage, and juniper berries. Season with salt and pepper.
- Cover and simmer over medium heat for about 30 minutes, turning the chicken pieces regularly.
- Add the red and white grapes, then continue cooking for 5 minutes, just enough to soften them without bursting them.
- Adjust the seasoning and serve very hot, accompanied by grilled polenta if desired.
