  • 1 600 mlchicken broth
  • 600 gfresh ramen noodles
  • 600 gpork belly
  • 4 pieceseggs
  • 120 mlsoy sauce
  • 80 mlmirin
  • 80 gmiso
  • 30 gfresh ginger
  • 3 clovesgarlic
  • 200 gshiitake mushrooms
  • 2 piecesbok choy
  • 4 piecesscallions
  • 2 piecesnori sheets
  • 20 mlsesame oil

Préparation

  1. Brown the pork belly, then gently braise it with half of the soy sauce, the mirin, garlic, ginger, and a little broth.
  2. Cook the eggs for 6 minutes and 30 seconds, cool them, peel them, then let them marinate in a soy-mirin mixture.
  3. Sauté the shiitake mushrooms and the bok choy. Heat the broth without letting it boil rapidly.
  4. Dilute the miso in a ladle of broth, then pour it back into the pot with the sesame oil.
  5. Cook the noodles separately, divide them into the bowls, then add the broth, sliced pork, half-egg, vegetables, scallions, and nori.
