  • 3 piecesbird’s-eye chillies
  • 5 piecesgarlic cloves
  • 1 pieceyardlong bean, cut into 4 cm pieces
  • 2 piecestomatoes, cut into small pieces
  • 1 tbsppalm sugar or brown sugar
  • 1 tbsproasted peanuts
  • 1 tbspdried shrimp
  • 1 tbsplime juice
  • 2 piecesunwaxed limes, quartered
  • 1 tbspfish sauce
  • 120 ggreen papaya, julienned
  • 1 portiongrilled chicken, optional for serving

Préparation

  1. Using a mortar and pestle, pound the chillies and garlic to a fine paste.
  2. Add the yardlong bean pieces and pound them lightly.
  3. Add the tomatoes, sugar, peanuts, dried shrimp, lime juice and lime wedges, followed by the fish sauce. Mix gently until the sugar has dissolved.
  4. Add the green papaya and mix again. Serve the salad on its own or with grilled chicken.
