Préparation
- Preheat the oven to 150°C. Rinse the duck under cold water and pat it dry with paper towels. Rub it thoroughly with the coarse salt and leave to rest for 30 minutes. Rinse and dry it again, then set aside.
- Using a mortar and pestle, crush the ginger, garlic and cilantro roots to a smooth paste. Transfer to a small bowl, add the five-spice powder, salted black soybeans, salt, cognac or alcohol and sugar, then mix. Place this stuffing inside the duck and set the duck on a baking tray.
- In a bowl, mix the honey, soy sauce and 10 cl water. Brush the duck all over several times with this glaze. Roast for about 1½ hours, until cooked through. Remove from the oven, cover with foil and rest for at least 15 minutes. Remove the drumsticks, slice the meat and set aside.
- For the soup, heat the chicken stock over medium heat. Place the star anise, cinnamon, garlic, cilantro roots and peppercorns in a spice bag, then add it to the stock. Cook for 5 minutes.
- Add the soy sauce, salt, sugar and dark soy sauce. Reduce the heat and cook for another 2 to 3 minutes.
- Divide the noodles, bean sprouts, spring onions, fried garlic and sliced duck among serving bowls. Add white vinegar, soy sauce, sugar and chilli flakes to taste, if desired, then serve.
